Buhtle

Buhtle | Photography and Styling by Sanda Vuckovic | Little Upside Down Cake

Writing this post I got an idea that just didn’t go out of my mind.
What if I make small stories with my family/friends and their favorite food?
What if I present to you the people I love and the food that they love?

A column called Friends, Family and Food was born and here it is…

From all my 4 aunts, my aunt Fatima made the best buhtle. She knew I’d prefer hers, so she would really often make them for me. Hot with sweet rosehip jam inside and a cup of milk… this would be my favorite thing.

Hana loves it also.
Hana is my 10 year-old daughter who loves red fruits, so… her buhtle would have red fruits jam filling.
She is smart and gentle and really often makes me proud.
She loves to eat buhtle and drink hot chocolate.
She is really tall and wears shoes number 38.
She is afraid of the dark and has a rabbit called Bunny.
She likes to knit and listen to music with the huge 80’s headphones from her father.

Ela é inteligente, gentil e muitas vezes deixa-me orgulhosa.
Ela adora comer buhtle e beber chocolate quente.

Buhtle

400g spelt flour
1ts dry yeast
2 egg yolks
80g soy margarine
80g coconut sugar
200ml luke-warm rice milk
pinch of salt
icing sugar, for dusting
jam or chocolate spread for filling

Combine all the dry ingredients and mix. Slowly add the egg yolks and milk and work with your hands until you get a soft dough. Cover with a cloth and leave to rise for about 1 hour at room temperature.

On a floured surface roll the dough flat to about 5mm thick. Using a knife, cut in 8x8mm squares, put 1 tsp of jam (or other filling) into the centre of the square, fold and close the edges tightly at the top.

Place them closely side-by-side in a well greased baking tray with the folded edges facing down.
Bake in a preheated oven at 190ºC for about 30 minutes, or until golden-brown in colour.

Remove from the oven, sprinkle with confectioner’s sugar and leave to cool for about 5 minutes before serving.

Buhtle
