<p>I love traveling, but I have to admit that in last year it is quite a challenge to travel with huge list of food intolerance, especially if I am going to spend most of the time in a small cities where I won&#8217;t be able to find products I need.<br />
I am going to spend next few days in London, and I know that there I probably wont have these problems but anyway I prepared a small emergency pack &#8230; spelt granola bars as airport snack and granola for my breakfasts.<br />
Granola bars are so good that it was quite hard not to est them all before I actually enter the plain.<br />
Do you try to eat good when traveling or you eat fast food you find on the way?</p>
<p>And yes..all good London foodie tips ate more then welcome..</p>

<h4>Spelt Granola Bars</h4>
<p>(adaptes from The Sprouted Kitchen by Sara Forte)</p>
<p>150g spelt flakes<br />
70g hazelnuts, copped<br />
55g cashews, chopped<br />
120ml rice syrup<br />
1tbs water<br />
1ts ground cinnamon<br />
1ts vanilla extract<br />
1/4ts sea salt<br />
30g rice puffs<br />
130g raisins</p>
<p>Preheat the oven to 180C. Spread the spelt flakes, hazelnuts and cashews a baking sheet and bake until just toasted, about 10 minutes. Remove from the oven and let cool.<br />
Turn down the heat to 150C. In a large mixing bowl, stir together the rice syrup, water, vanilla, cinnamon and salt. Add the toasted oats and nuts , rice puffs and stir until it is all coated. Stir in the raisins.<br />
Line a small baking pan with parchment paper, leaving an overhang on two sides for an easy removal. Dump the granola mixture in the centre. Using a large spoon, press down the mixture compactly, being sure to push it all the way into the corners. Bake until the top is slightly toasted, about 25 minutes.<br />
Remove from the oven and let cool completely. Pull them out by the parchment edges and cut 8 equal bars.<br />
If you want to eat them later, wrap each bar individually in baking paper.</p>

All the city is celebrating and, on the 13th of June, St. António is on every corner. You can find grilled sardines and wine and Lisbon is full of colour. I love June in Lisbon and I love to celebrate together with the city&#8230;</p>
<p>We also had a big family celebration..  88th birthday of M.&#8217;s grandfather. Lovely family gathering, a lot of food and party all the day {*smile}.</p>

<p>Nos últimos 12 anos que vivo em Lisboa, Junho está marcado na minha agenda com letras grandes: FESTEJAR.<br />
Toda a cidade está em festa e, no dia 13 de Junho, o Sto. António está em todos os cantos. Pode-se encontrar sardinhas assadas e vinho e Lisboa está cheia de cor. Eu adoro Junho em Lisboa e adoro festejar junto com a cidade&#8230;</p>
<p>Também tivemos uma grande celebração familiar&#8230; o 88º aniversário do avô do M. Uma bonita reunião de família, bastante comida e festa o dia todo {*smile}.</p>

<p>I love writing lists, all kinds of them. And when I say writing, I mean really ink and paper writing. My agenda is full of them and, when I don&#8217;t have nothing to do, I just pick my agenda and start&#8230;<br />
This weekend I wrote a list of things that make me happy and I wanted to share a part of it with you:</p>
<p>hugs from my kids<br />
smile on M&#8217;s face<br />
big, lazy breakfasts<br />
walk in the forest<br />
smell of fresh bread<br />
family and friend gatherings<br />
reading<br />
fresh flowers in my apartment<br />
good music on my kitchen radio<br />
long phone calls with my parents<br />
laughing with my sister<br />
long bicycle rides</p>

<p>Eu adoro escrever listas, de todos os tipos. E quando eu digo escrever, quero dizer mesmo com tinta e papel para escrever. A minha agenda está cheia delas e, quando não tenho nada para fazer, agarro na agenda e começo&#8230;<br />
Este fim de semana escrevi uma lista de coisas que me fazem feliz e gostaria de partilhar uma parte dela convosco:</p>

<h4>Rhubarb Cake</h4>
<p>(adapted from Seasons by Donna Hay)</p>
<p>250g rhubarb, finely chopped<br />
55g blueberries<br />
60g coconut sugar<br />
100g coconut oil, melted<br />
75g coconut sugar<br />
150g spelt flour<br />
1ts baking powder<br />
50g hazelnut meal<br />
60ml rice milk</p>
<p>Preheat the oven to 180ºC.<br />
Place the rhubarb, blueberries and sugar in a bowl and mix to combine. Set aside.<br />
Place the coconut oil, sugar, flour, baking powder, hazelnut meal and milk in a bowl and stir to combine.<br />
Press half the cake mixture into the base of cake tin and top with the fruits mixture.<br />
Press the remaining cake mixture on top and bake for 40-45 min or until cooked.</p>

<h4>Bolo de Ruibarbo</h4>
<p>(adaptado de Seasons por Donna Hay)</p>
<p>250g ruibarbo picado<br />
55g mirtilos<br />
60g açucar de côco<br />
100g óleo de côco, derretido<br />
75g açucar de côco<br />
150g farinha de espelta<br />
1ts fermento em pó<br />
50g farinha de avelã<br />
60ml leite de arroz</p>
<p>Pré-aqueça o forno a 180ºC.</p>
<p>Coloque o ruibarbo, mirtilos e o açúcar numa tigela e misture para combinar. Guarde.<br />
Coloque o óleo de côco, o açúcar, a farinha, o fermento em pó, farinha de avelã e leite numa tigela e misture bem.<br />
Pressione metade da mistura do bolo na forma do bolo e coloque por cima a mistura de frutas.<br />
Pressione a restante mistura do bolo por cima e leve ao forno durante 40-45 minutos ou até ficar cozido.</p>

We welcomed it, preparing jackets, blankets and wood to make fire.<br />
Guests arrived with hands full of wild flowers and big smiles on their faces, eager to start making beautiful arrangements.<br />
Wooden stove was ready to cook the organic meal for our guests and we started our meal surrounded with fruit trees and flowers. Everybody felt as at home, helping to place table, bringing food, speaking with the other guests, laughing&#8230; it felt like a big family gathering.<br />
Fire was a place to gather around and continue stories with a glass of wine&#8230; until late in the evening&#8230;</p>

<p>O frio e o vento decidiram fazer-nos companhia naquele fim de semana.<br />
Demos-lhes as boas vindas, preparando casacos, cobertores e madeira para fazer a fogueira.<br />
Os convidados chegaram com as mãos cheias de flores silvestres e grandes sorrisos nos rostos, ansiosos por começar a fazer belos arranjos.<br />
O forno a lenha estava pronto para cozinhar a refeição biológica para os nossos convidados e começamos a nossa refeição rodeados de árvores de fruto e flores. Todos se sentiam como em casa, a ajudar a pôr a mesa, a trazer comida, a falar com os outros convidados, a rir&#8230; parecia uma grande reunião de família.<br />
A fogueira era o lugar para se reunir ao redor e continuar histórias com um copo de vinho&#8230; até bem tarde de noite&#8230;</p>

<p>Decisions are not easy to make. There is always a doubt: &#8216; What if I am making the wrong decision?&#8217;, and we know that the answer will come only with time.<br />
On a freelancing road, from time to time I come to a point when the road has two or more exits, and I know it is just me that has to decide which road to take. Sometimes I know it immediately but others I spend a lot of time on that same point, thinking about all of the bad and good things that each road can bring.</p>

<p>As decisões não são fáceis de fazer. Há sempre uma dúvida: &#8220;E se eu tomar a decisão errada? &#8216;, e nós sabemos que a resposta só virá com o tempo.<br />
Numa estrada de freelancer, de vez em quando chego a um ponto em que a estrada tem duas ou mais saídas, e eu sei que sou só eu que tenho de decidir qual o caminho a tomar. Às vezes sei imediatamente mas outras passo muito tempo no mesmo ponto, a pensar em todas as coisas boas e más que cada estrada pode trazer.</p>

<p>During May I came into one of these points. I knew I have to change something, I needed to make decision but it was not easy.<br />
I was a few weeks with just one question in my head: &#8216; What to do next?&#8217;, and last week the answer came to me&#8230; just like that.<br />
I still don&#8217;t know if it was the wrong or right thing to do, there is always a risk included&#8230; but I feel more calm, relaxed&#8230; I can continue my road and time will show&#8230;</p>
<p>During the weekend I felt the need to bake and cook (I felt a bit lack of it in the last weeks), to spend time in the kitchen&#8230; and sun was there to accompany me, so what could be better then berry bread for a sunny afternoon snack?</p>

<p>Em maio entrei num desses pontos. Eu sabia que tinha de mudar alguma coisa, precisava de tomar a decisão, mas não foi fácil.<br />
Andava há algumas semanas com apenas uma pergunta na minha cabeça: &#8220;O que fazer a seguir?&#8221;, e na semana passada a resposta chegou&#8230; assim do nada.<br />
Ainda não sei se foi a coisa errada ou certa a fazer, há sempre algum risco incluído&#8230; mas sinto-me mais calma, relaxada&#8230; posso continuar o meu caminho e o tempo vai mostrar&#8230;</p>
<p>Durante o fim de semana senti necessidade de cozer e cozinhar (senti um pouco a falta disso nas últimas semanas), de passar tempo na cozinha&#8230; e o sol estava lá para me acompanhar, por isso o que poderia ser melhor do que pão de frutos silvestres para um lanche de uma tarde ensolarado?</p>

<h4>Summer Berry Bread</h4>
<p>(adapted from Nordic Bakery Cookbook by Miisa Mink)</p>
<p>Dough:</p>
<p>7g dried yeast<br />
500g spelt flour<br />
85g sugar<br />
75g soy margarine<br />
1/2ts salt<br />
1 egg<br />
250ml lukewarm rice milk</p>
<p>Filling:</p>
<p>3tbs spelt flour<br />
3tbs sugar<br />
500g fresh berries (I used blueberry and strawberry)<br />
40g dried spelt breadcrumbs<br />
1ts cardamom</p>
<p>Place flour, salt, yeast, sugar and margarine in a big bowl. Work with your fingertips until you get crumbs.  Beat together the egg and milk. Pour the mixture into the dry ingredients. Knead it into the dough with your hands until thoroughly incorporated. Cover with a clean tea towel and leave to prove in a warm place for 30min.</p>
<p>Turn on the oven to 200ºC.<br />
To make the filling, put the flour, sugar, cardamom and berries in a separate bowl and mix until berries are evenly coated.</p>
<p>Roll out the dough on a floured work surface until it is 4cm larger then the prepared roasting tray. Line the prepared roasting tray with the pastry (the pastry should go only slightly up the sides). Cut off the excess pastry.<br />
Sprinkle the breadcrumbs over the pastry case, then spread the berries evenly on the top. Gather up the offcuts of pastry and roll out on the floured work surface again. Cut into long stripes and lay four strips diagonally across the top of the bread. Repeat with four strips  in the opposite direction. Stick the ends of the stripes to the edge of the tart with a dab of water. Brush with the egg wash.</p>
<p>Bake on the middle rack for 30 minutes. Leave to cool slightly , then dust with icing sugar and serve warm.</p>

<h4>Summer Berry Bread</h4>
<p>(adaptado de Nordic Bakery Cookbook por Miisa Mink)</p>
<p>Massa:</p>
<p>7g levedura seca<br />
500g de farinha de espelta<br />
85g açúcar<br />
75g margarina de soja<br />
1/2 colher de chá de sal<br />
1 ovo<br />
250ml leite de arroz morno</p>
<p>Recheio:</p>
<p>3 colheres de farinha de espelta<br />
3 colheres de açúcar<br />
500g de frutos silvestres (eu usei mirtilo e morango)<br />
40g de pão de farinha de espelta ralado<br />
1 colher de chá de cardamomo</p>
<p>Coloque a farinha, o sal, o fermento, o açúcar e a margarina numa tigela grande. Trabalhe com as pontas dos dedos até obter migalhas. Bata o ovo e leite. Despeje a mistura nos ingredientes secos. Misture a massa com as mãos até ficar bem incorporado. Cubra com um pano de cozinha limpo e deixe repousar num lugar quente durante 30 minutos.</p>
<p>Ligue o forno a 200ºC.<br />
Para fazer o recheio, coloque a farinha, o açúcar, cardamomo e frutas numa tigela e misture em separado até os frutos ficarem uniformemente revestidos.</p>
<p>Abra a massa sobre uma superfície enfarinhada até ficar 4 centímetros maior do que a forma preparada. Coloque a massa na forma preparada (a massa deve ir apenas ligeiramente acima dos lados). Corte o excesso de massa.<br />
Polvilhe as migalhas de pão essa masse e de seguida espalhe as frutas uniformemente por cima. Recolha as sobras de massa e enrole novamente na superfície enfarinhada. Corte em tiras longas e ponha quatro faixas na diagonal na parte de cima do pão. Repita com quatro tiras no sentido oposto. Cole as extremidades das faixas na borda da torta com um pouco de água. Pincele com o ovo batido.</p>
<p>Coza na prateleira do meio durante 30 minutos. Deixe arrefecer um pouco e em seguida polvilhe com açúcar em pó e sirva quente.</p>

<p>Eu tenho de te dizer que tinha grandes planos para ti: jantares no terraço, piqueniques no parque, passeios de bicicleta&#8230; mas parece que tiveste alguns problemas com o sol e não me deixaste fazer todas essas coisas.</p>
<p>Não posso dizer que não tentei. Mesmo com casacos e cobertores fizemos algumas dessas coisas, mas&#8230;</p>
<p>Queria andar descalça e sentir a relva<br />
Queria sentir o sol a brilhar no meu rosto<br />

<p>Estava à espera deste jantar toda a semana. Senti que ia ser especial.<br />
Duas amigas, amigas que conheci através de blogs, cujo trabalho e estética admiro, partilharam uma refeição comigo.<br />
Comemos, bebemos vinho, rimos muito e, quando olhamos para o relógio, percebemos que passamos tantas horas juntas e que o tempo passou tão rapidamente.</p>

<p>I have to admit that the next day I woke up with a bit of hangover but still smiling on the jokes from the night before. I decided to give use to the leftover of the spinach burek filling that I made for dinner and remembered immediately the <a title="great recipe" href="http://www.sproutedkitchen.com/home/2013/1/10/squash-goat-cheese-empanadas.html" target="_blank">great recipe</a> that I saw recently on one of my favorite blogs. Made some changes and got a perfect hangover lunch for me {*smile}</p>

<p>Tenho de admitir que no dia seguinte acordei um bocadinho ressacada, mas ainda a sorrir das piadas da noite anterior. Decidi dar uso às sobras do recheio do burek de espinafres que fiz para o jantar e lembrei-me imediatamente da <a title="great recipe" href="http://www.sproutedkitchen.com/home/2013/1/10/squash-goat-cheese-empanadas.html" target="_blank">receita fantástica</a> que vi recentemente num dos meus blogs favoritos. Fiz algumas mudanças e consegui o almoço perfeito de ressaca para mim {*smile}</p>

<h4>Spinach and Cheese Spelt Empanadas</h4>
<p>(adapted from <a title="Sprouted kitchen" href="http://www.sproutedkitchen.com" target="_blank">Sprouted kitchen</a>)</p>
<p>Dough:</p>
<p>250g spelt flour<br />
150g soy margarine<br />
1ts salt<br />
1 egg<br />
3tbs goat yogurt</p>
<p>Place flour, salt and margarine in a big bowl. Work with your fingertips until you get crumbs. Beat together the egg and 3 tbsp of yogurt. Pour the mixture into the dry ingredients. Using your fingertips, mix them smoothly. The dough should get together quickly. Press to form a ball, cover with plastic film and keep on the fridge for at least 15 minutes.</p>
<p>Filling:</p>
<p>150g fresh spinach<br />
40g goat feta<br />
100g fresh goat cheese<br />
60g goat yogurt<br />
1 egg<br />
1ts salt</p>
<p>Blanch the spinach in a saucepan of boiling water for 30s. Drain and squeeze to get rid of excess water. Chop finely, then put in a mixing bowl together with a rest of the ingredients and mix well.</p>
<p>Turn on the oven to 180ºC. Prepare a parchment lined baking sheet. Roll out the dough on a floured work surface and press out the circles for your empanadas. You can use 10cm cutters. Leaving plenty of space around the edge, put a dollop of the filling in the center and fold the circle over. Press the edge with your finger to seal and then press along the edge with the back of your fork. Lay the empanadas on the baking sheet and brush the tops with the egg wash. Sprinkle the sesame seeds and some thyme leaves and bake on the middle rack for 30 minutes or until just golden.</p>

<h4>Empanadas de Espelta com Espinafres e Queijo</h4>
<p>(adaptado de <a title="Sprouted kitchen" href="http://www.sproutedkitchen.com" target="_blank">Sprouted kitchen</a>)</p>
<p>Massa:</p>
<p>250g de farinha de espelta<br />
150g de margarina de soja<br />
1 colher de chá de sal<br />
1 ovo<br />
3 colheres de iogurte de cabra</p>
<p>Coloque a farinha, o sal e a margarina numa tigela grande. Trabalhe com as pontas dos dedos até obter migalhas. Bata o ovo e as 3 colheres de sopa de iogurte. Despeje a mistura nos ingredientes secos. Usando a ponta dos dedos, misture-os bem. A massa deve ficar junta rapidamente. Pressione para formar uma bola, cubra com filme e mantenha no frigorífico durante pelo menos 15 minutos.</p>
<p>Recheio:</p>
<p>150g de espinafre fresco<br />
40g de feta de cabra<br />
100g de queijo de cabra fresco<br />
60g iogurte de cabra<br />
1 ovo<br />
1 colher de chá de sal</p>
<p>Escalde o espinafre numa panela de água a ferver durante 30 seg. Escorra e esprema para retirar o excesso de água. Pique bem e coloque numa tigela juntamente com os restantes ingredientes e misture bem.</p>
<p>Ligue o forno a 180ºC. Prepare um tabuleiro forrado a papel vegetal. Abra a massa sobre uma superfície enfarinhada e pressione os círculos para as seus empanadas. Pode usar cortadores de 10 centímetros. Deixando muito espaço ao redor da borda, coloque uma colherada do recheio no centro e dobre o círculo ao meio. Pressione a borda com o dedo para selar e pressione ao longo da borda com a parte de trás do seu garfo. Coloque as empanadas no tabuleiro e pincele o topo com o ovo batido. Polvilhe com as sementes de sésamo e algumas folhas de tomilho e asse na prateleira do meio durante 30 minutos ou até ficarem douradas.</p>

				<content:encoded><![CDATA[<p>With all due respect to molecular food and Michelin stars&#8230; if I have to choose between one of Michelin stars dish and a simple rustic homemade dish, I would definitely go for a second option.<br />
Every time I make something that has only a few ingredients, organic and seasonal, I get amazed how these simple dishes can have such a great taste and I mmmmmm almost all the time I eat it.</p>

<p>Com todo o respeito pela cozinha molecular e estrelas Michelin&#8230; se tiver de escolher entre um prato das estrelas Michelin e um prato simples caseiro rústico, de certeza que iria para a segunda opção.<br />
Todas as vez que faço algo com poucos ingredientes, biológicos e sazonais, fico espantada com a forma como estes pratos simples podem ter um gosto fantástico e eu mmmmmm quase todo o tempo que o como.</p>

<p>Fresh tomato, basil, garlic, salt and olive oil and there&#8217;s this absolutely stunning thing in front of me and I can&#8217;t stop eating it&#8230; Since I welcomed spring, I think I have almost every day one of these simple dishes for my lunch and I can&#8217;t get enough of it.</p>

<p>Tomate fresco, manjericão, alho, sal e azeite e fica esta coisa absolutamente deslumbrante à minha frente e eu não consigo parar de comer&#8230; Desde que acolhi a primavera, acho que como quase todos os dias um desses pratos simples ao almoço e não me farto.</p>

<p>I am in the middle of a super baking phase. Family birthdays, clients orders, friends gatherings&#8230; I think I never baked that much as I did during this week.<br />
My oven works every day and even I am tired and get into deep sleep as soon as I sit on my couch in the evening. I feel happy for being busy.<br />
In times like these, I stay with a lot of &#8216;cake leftovers&#8217; (when I make layer cakes which I have to cut the tops to put them straight and these leftovers are what I am referring here) and the best way to use them is to make trifle.</p>

<p>Estou no meio de uma fase de super cozedura. Aniversários da familia, pedidos de clientes, encontros de amigos&#8230; acho que nunca cozido tanto quanto durante esta semana.<br />
O meu forno trabalha todos os dias e até eu estou cansada e entro em sono profundo assim que me sento no sofá à noite. Sinto-me feliz por estar ocupada.<br />
Nestas alturas, fico com bastantes &#8216;sobras de bolo&#8217; (quando faço bolos de camadas que tenho de cortar os topos para ficarem direitos e estas sobras são o que eu me estou a referir referindo aqui) e a melhor maneira de os usar é fazer trifle.</p>

<p>I won&#8217;t give you any special recipe today. For me, making trifle is something you just need a bit of imagination (and looking at the fridge for what you currently have at home).<br />
I made these ones for the friends who came for dinner the other night&#8230; leftovers of chocolate cake, macerated strawberries and mascarpone cream. Really quick and great dessert.</p>

<p>Não vou dar nenhuma receita especial hoje. Para mim, fazer trifle é algo para o qual só precisa de um pouco de imaginação (e olhar para o frigorífico para ver o que já tem em casa).<br />
Fiz estes para os amigos que vieram jantar cá a casa uma noite&#8230; sobras de bolo de chocolate, morangos macerados e creme de mascarpone. Muito rápido e uma grande sobremesa.</p>
